Gratin of chopped clams
1.5 cups chopped clams
1 egg
1 tablespoon Coffee finely chopped onion juice or onion
1 tablespoon lemon juice
Salt
Pepper
1.5 cups crumbs buttered bread
Mix clams, a little beaten egg, lemon juice, onion, salt and pepper. Place layer of bread crumbs in butter in shells. Cover with mixture of clams. Top remaining crumbs. Bake in moderately hot oven (375 degrees F.) 10 minutes. Makes 4 servings.
Fried Shrimp
1 / 2 cup flour
1 / 2 teaspoon baking powder
1 / 2 teaspoon salt
Pepper
1 egg
1 / 3 cup milk
Shrimp cooked fresh or canned
Mix and sift dry ingredients. Beat the egg. Add milk to the egg and beat, and Through add to dry ingredients. Beat until smooth. Dip shrimp in batter. (Make sure each shrimp is thoroughly dry before soaking, otherwise the dough will not. hang.) Fry in deep fat hot enough to brown a cube of bread in 60 seconds (375 degrees F.). Turn once to Drain the shrimp evenly over brown paper. Serve hot in individual tanks portions of shrimp sauce in baskets of lemon. (Shrimp Sauce is just tomato ketchup with a dowry of "hot" prepared mustard.) shrimp is dipped in sauce and eaten.
Crab Gratin
4 tablespoons butter
4 tablespoons flour
2 cups light cream or milk top
1 / 2 teaspoon salt
Dash each pepper, cayenne pepper and paprika
1 / 2 teaspoon Worcestershire sauce
2 tablespoons chopped parsley
2 cups crab, chopped into 1/2-inch pieces
1 / 4 cup soft bread crumbs butter
Melt the butter in a saucepan, add flour and stir to smooth paste. Add cream and cook until thickened, stirring constantly. Add seasoning, Worcestershire sauce, 1 / 2 parsley and fish. Pour in a well greased pan. Sprinkle with bread crumbs and remaining parsley on top. Bake in moderate oven (350 degrees F.) 20 minutes, or until the crumbs are golden. Makes 6 small servings or 4 generous. May also be baked in individual ramekins or shells.
Other Party Ideas
Serve hot in the shells of scallops sauteed as suggested for the fried shrimp with tartar sauce in baskets of lemon. Dip the scallops in the sauce and eat. Serve pieces of fried lobster the same way with the same sauce. Or fried scallops with garnish of chopped parsley on toast chopped parsley on toast with lemon. A fine dinner main dish consists of shrimp cream inside a ring of rice, decorated with slices of roasted tomatoes and broccoli.
